If there is one gift from the kitchen that everyone in my family LOVES it’s roasted or flavored nuts. Everyone has a different favorite nut: pistachio, cashews, and hazelnuts. However, the one nut everyone enjoys is the humble Almond.
Previously, I have shared my recipes for Candied Cumin Almonds, savory Cumin Almonds, and Chai Spiced Almonds. Today I have another recipe that I think you’ll enjoy.
Chocolate Candied Almonds
Now, the name will fool you a bit. These nuts are neither super sweet nor overly chocolaty. Nope, they have just a hint of sweetness and chocolate to make your almonds special.
These are made like Candied Cumin Almonds, over the stove. You’ll have to work quickly but boy they are good.
Ingredients:
- 3 cups raw almonds
- 3 Tbsp coconut oil
- 1/4 cup granulated sugar
- 1 Tbs dutch cocoa powder
- 1 tsp vanilla extract
In a skilled over medium high to high heat, melt the coconut oil. Add the almonds, stirring constantly. After approximately 3 minutes you will hear the almonds begin to make popping sounds, similar to popcorn popping.
After another minute has passed (don’t forget to keep stirring continuously) add the sugar/cocoa mix and the vanilla extract. Keep stirring and after about 15 seconds or so, the sugar will seem to melt. When the total cooking time has reached approximately 7 minutes, the melted sugar will have totally coated the almonds with no more “pooling” on the bottom of the pan.
Turn off the heat and immediately dump the almonds onto a cookie sheet to cool.
Store these in an air tight container.
