When I say “burgers” what comes to mind? Do you think of a thick angus burger? Do you think of a veggie burger? Or perhaps you think of a fast food place?
Well, when I say the word “burger” in my house, I am faced with a challenge. My guys all want that thick, juicy, angus burger with tons of toppings. My daughter and I prefer turkey, chicken, or veggie burgers. So once again, I need to put my thinking cap on to find a way to satisfy everyone.
Okay, my guys also enjoy foods with some kick so what if I made chicken burgers but tossed in some spicy cheese along with some cayenne and other spices?

Tex-Mex Chicken Burgers
Ingredients:
- 1 pound ground chicken
- 1 cup shredded pepper jack cheese
- 1/2 cup bread crumbs
- 1 egg
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
Form your chicken mixture into patties and place in the refrigerator for a minimum of 30 minutes. This step helps your burgers keep their shape during the cooking process.
Cook your burgers on the grill or on the stove top as I did. Your burgers are done when they reach an internal temperature of 165 Degrees F. Serve on a bun and with any other toppings you like on your burgers!
Note: If cooking your burgers on the grill, if your burgers have not cooked enough, you will find that they stick to the grill and may fall apart.
