When I was a kid, there was one kind of nut butter on the shelf: peanut butter. Now, when you stop by your local grocery store, you’ll find things like nutella, almond butter, and chocolate peanut butter right alongside regular old peanut butter. Chocolate Almond Butter
It’s no secret that almonds are one of my favorite nuts. They are just so versatile and oh, so yummy! So here’s how I made my yummy Chocolate Almond Butter.
Ingredients:
- 2 cups roasted almonds (fresh roasted is best if you have time but roasted from the store works well)
- 1/2 cup dark chocolate or semi-sweet chocolate chips (I like the mini semi-sweet chips)
- 2 Tbsp coconut oil
Place the almonds in your food processor and turn on. Your almonds will go through the following stages:
- Ground meal
- Clump together like a big ball in your food processor
- Spread out and become a smooth nut butter
In a double boiler, place the chocolate chips and coconut oil. Place on the stove and heat until the chocolate chips and coconut oil are melted and have been completely stirred together. Pour your chocolate/coconut oil mix into the food processor with your almond butter and process until it is nice and smooth.
And that’s it! The almond butter will be a bit runny so it is best to wait a while for it to set up. Oh, it’s so good and delicious! I love it on crackers, apples and celery but it’s awfully darn tasty on a spoon too!
Now be prepared to make this stuff pretty regularly ’cause it’s ssssssoooooo good!
