Okay, how many of you have heard of cardamom? How many of you have some in your pantry but can’t recall why it’s there? How many of you are saying, “Carda…Huh?”
If you’ve had chai, you’ve tasted cardamom…it’s the spice that gives that yummy chai latte it’s distinctive flavor. Cardamom has a sweet-spicy taste and is somewhat aromatic. Today, I’m going to share a recipe with you for some muffins that showcase how wonderfully the flavors of oranges and cardamom go together.
Orange Cardamom Muffins
Ingredients:
6 Tablespoons butter, melted and cooled
Zest from 1 orange
Juice from 2 oranges (approx 1/3 cup)
2 eggs
1 cup non-fat plain Greek yogurt
1 tsp vanilla
2 cups all purpose flour or whole wheat pastry flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cardamom
pinch of salt
Directions:
Preheat oven to 400 Degrees F. Grease a 12-muffin tin and set aside.
In a bowl, combine the melted butter, orange zest, orange juice, eggs, yogurt, and vanilla. Mix.
To your wet ingredients, add the flour, sugar, baking powder, baking soda, cardamom, and salt. Blend until all the dry ingredients have been incorporated but do no over-mix.
Evenly divide the batter between your twelve muffin cups. Bake 15-20 minutes until a tooth pick comes out clean.
