Chocolate Peppermint Rice Krispy Treats
These are super easy to make and don’t they look absolutely festive? They were inspired by these peppermint marshmallows I found at Wal-Mart.
Okay, are you ready for the recipe?
Ingredients:
- 1 12 oz package of peppermint marshmallows
- 1/4 cup coconut oil (or butter)
- 6 1/2 cups rice krispy cereal
- 1 cup crushed candy canes, divided
- 10 oz dark chocolate melting discs
- 3 Tbsp coconut oil or butter
Sprinkle a cookie sheet lined with parchment paper, waxed paper or silpat liner with the remaining crushed candy canes and set aside.
In a double boiler, add the chocolate discs and the 3 Tbsp coconut oil (butter). Cook over simmering water, stirring constantly, until the chocolate is completely melted and smooth. Then, place one treat into the melted chocolate to cover the bottom with chocolatey goodness. Using a fork, remove the treat from the melted chocolate and place it onto the candy lined cookie sheet.
Once all of your treats have chocolate bottoms, using a spoon, drizzle the remaining chocolate over the tops. Allow the chocolate to set up and then either serve or package for gift giving
