A sweet treat that my boys absolutely LOVE is moon pies. You can buy them at the store but when I was wandering around the extensive Wilton displays at Jo-Ann Fabric and Crafts, look at what I found!
I just love the eye decorations and take a look at the sprinkles set…I was blown away. Then when I passed the candy melts display the pumpkin spice ones caught my eye. Okay, I just HAD to try to make some pumpkin spice moon pies for my guys. Take a look at how they turned out!
And when you cut one in half….It is a moon pie! I also like these because they are much smaller than the ones from the store. These are probably 2-3 bite goodies. Are you ready to make some?
Pumpkin Spice Moon Pies
Ingredients:
- 1 box vanilla wafers
- 1 bag marshmallows
- 1 bag Wilton pumpkin pie spice candy melts
- 1 bag Wilton white candy melts
- 2 Tbsp coconut oil
- Wilton sprinkles
- Wilton candy eyeballs
Now it’s time to cover these goodies with chocolate. In a double boiler, place the remaining pumpkin pie spice candy melts and 2 Tbsp coconut oil. Melt, stirring gently. Place one of your sandwich cookies in the melted chocolate to coat.
Place the coated moon pies on a parchment paper or silpat lined cookie sheet. Add some sprinkles to decorate.
Repeat this process with the white candy melts. Top some with candy eyes and some with sprinkles. Aren’t these fun?
Notes:
- The reason why you cut the marshmallow in half is it is just too tall.
- Marshmallows are covered with cornstarch, I believe, to keep them from sticking together in the bag. This is why you want to place the cut side down in step one and why you add one candy melt on top. If you don’t add the candy melt, you will find that the top wafer won’t stick to the marshmallow very well.
