I don’t know about you but there’s something incredibly romantic about Italian food. I know this is crazy since it always contains garlic which means….BAD BREATH! Can you explain this phenomenon?
Well, a couple of weeks ago, my husband and I had a date night and discovered this amazing Italian restaurant, The Warehouse, Italian Dinners. I had their sun dried tomato pesto on penne pasta and you talk about heaven on a plate. It was wonderful.
I absolutely love making pesto (you can see my two previous pesto posts HERE and HERE) but I’ve only ever made it with a fresh basil base. Well, like all DIYers, after enjoying my penne at The Warehouse, this meant that I had to experiment in my own kitchen to see if I could create anything even close to this dish. Although my attempt isn’t exactly what I enjoyed at The Warehouse, Italian Dinners, it is still yummy! My husband thoroughly enjoyed his dinner. Why don’t you give it a try!
Sun Dried Tomato Pesto
Ingredients:
- 1/4 cup sun dried tomatoes, packed in oil
- 1/4 cup extra virgin olive oil
- 1/4 cup grated parmesan, romano, asiago, or manchego cheese
- 2-3 cloves raw garlic
- 2 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
