Five Potato, Six Potato, Seven Potato, More!
That should be my family’s chant is whenever I serve potatoes as a side dish. Why? Well, they go crazy whenever we have potatoes with dinner. Is your family nuts for potatoes too? If so, they’re going to love this recipe! You’re going to love it too ’cause it’s simple but will give your meal that “gourmet” feel!
Rosemary Smashed Potatoes
Ingredients:
- Small red potatoes
- 3 Tbsp oil (I used coconut oil but olive oil would work well)
- 1 tsp rosemary
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
Directions:
Wash your red potatoes and remove any bad spots. Place in a pan, cover with water, and boil for approximately 30 minutes or until they are tender and can be pierced with a fork. While your potatoes are boiling, place your spices and oil in a pot and cook for a couple of minutes (to infuse the spices into the oil).
Preheat your oven to 400 Degrees F. Remove the boiled potatoes and place on a baking pan that has been sprayed with oil. Using the bottom of a glass, “smash” your potatoes. Brush your potatoes with your oil/spice blend and bake in the oven for 15 minutes. Remove your baking pan from the oven and flip your potatoes over and brush with the remaining oil/spice blend. Return to the oven and bake and additional 15 minutes.
Remove your cooked smashed potatoes from the oven and place on a platter to serve. These go great with almost any meal. Oh, act fast ’cause they won’t stay around long!
