If you were to ask me what is the one fruit/vegetable that sings “summer harvest” I would answer, “fresh picked tomatoes”. There is nothing like a vine ripened, fresh picked tomato. They are so amazing that all you need to enjoy them is a sprinkle of salt. Summer harvest heaven!
Well, I’m super bummed to report that my tomato crop has been incredibly dismal this year. So, I stopped by my local farmer’s market to order a bushel of tomatoes to learn that they are not selling tomatoes by the bushel this year. Evidently I’m not the only one who will not be experiencing the nightmare of, “what am I going to do with all these tomatoes?!”
When I first put together my plans for the summer season of Party Thyme, I had plans to be sharing with you recipes for homemade spaghetti sauce, homemade ketchup, homemade BBQ sauce and oh so many more delights. But, alas, I just have enough roma tomatoes ripening to enjoy some on a salad or on a sandwich.
The few tomato plants that are producing a bit more heavily are my grape tomato plants. I decided to share with you how you can oven dry your own tomatoes! So, if you like sun dried tomatoes, you’ll definitely enjoy these! They are super simple to make but like the fruit leather, you just need to be patient.
