Have you ever had something that was just adequate for the task but you really wanted an upgrade? However, the only thing standing between you and your new goodie was the cost? Well, look what I picked up the other day.
Yup, a KitchenAid blender! Isn’t she a beauty? My old blender was one I had picked up at Wal-Mart years ago and it had two speeds: slow and fast. So what made me take the plunge and splurge on this?
Check out that price! It was just too good to pass up. So, when you get a new kitchen toy what do you do? You have to make something yummy. We have a local Mexican restaurant and they serve complimentary chips and salsa while you wait for your food. Their salsa isn’t chunky but a smoothly blended dish of yumminess. So, I decided to create my own bowl of Mexican deliciousness.
Fresh Salsa
Ingredients:
- 3 pounds of fresh tomatoes, blanched
- 1/2 cups chopped red onion
- 2-3 chili peppers, seeded and chopped ( serranos, poblanos, or jalapenos)
- juice of one lime
- 1/8 cup chopped fresh cilantro
- 2 tsp salt
- 1/2 tsp cayenne pepper
- 1 tsp garlic powder
- 1/2 tsp ground cumin
