Have you ever been in a gourmet food store and walked down the oil aisle? Did you notice all the amazing olive oils that have been infused with various herbs and spices? You know, garlic, tarragon, etc? Well, I recently made some Oven Dried Tomatoes and thought it would be fun to try to make my own infused olive oil.
Dried Tomato Infused Olive Oil
Ingredients:
- 1/4 cup Sun dried tomatoes or Make Your Own Oven Dried Tomatoes
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- 3/4-1 cup olive oil
Directions:
In a clean and sterilized jar, add your dried tomatoes.
Next, add your spices.
Pour enough olive oil to fill your jar, leaving some head space. Place a lid on your jar and place in the sun for a day for your flavors to begin blending.
Store your oil in a cool dark place for 1-2 weeks, shaking the contents every other day.
Doesn’t it look fabulous! It’s great for dipping bread into. How about adding it to some vinegar for a quick Italian vinaigrette. Or my favorite, drizzle some on fresh hot pasta and toss!
