Have you ever had grilled chicken that has been marinated in a yogurt sauce? If not, you definitely need to. A yogurt marinade makes for a truly tender piece of chicken that has a a slightly tangy flavor. Trust me, you’ll LOVE it!
The recipe I’m going to share with you today was inspired by Grilled Lemon Yogurt Chicken from Food Wishes. Are you ready to “Get Your Grill On” and make some Grilled Lemon Yogurt Chicken? (I’ll also show you how I make Chicken Gyros)
Grilled Lemon Yogurt Chicken
- 4 lbs boneless, skinless chicken breasts (this will give you ample leftovers for use in salads, wraps, etc)
- 1 cup PLAIN Greek yogurt
- Zest from 1 lemon
- Juice from 1 lemon
- 4 cloves garlic minced
- 1 Tbsp aleppo pepper, crushed
- 1 Tbsp oregano
- 1 tsp fresh ground black pepper
- 1 tsp salt
- 3 Tbsp olive oil
Directions:
The first thing you need to do is to pound your chicken breasts so that they are all even thickness. This will help to ensure even and thorough cooking. Just take a piece of plastic wrap, lay a breast on top, fold over the plastic wrap to cover your chicken, and gently pound with the smooth side of a meat mallet. You are not trying to pulverize your chicken, just make sure that the breast is uniformly thick.
In a large bowl, place your chicken breasts along with all the additional ingredients. Mix to thoroughly coat every piece of chicken.
Leaving the yogurt coated chicken in the bowl, cover with plastic wrap. Place the covered chicken into the refrigerator to marinate a minimum of 3 hours or more….even overnight.
Heat up your grill and create 3 cooking areas: hot,medium, warm. Do this by piling your coals 2 layers deep on one side (hot) , one layer deep in the middle (medium), and no/few coals on the far side (warm).
Cook, your chicken on the hot side 2 minutes. Flip your chicken over and place in the middle/medium and cook for an additional 2 minutes. The finally, move your chicken to the far/warm side to finish cooking. Juices should run clear when your chicken is fully cooked.
Now, you can serve your chicken breasts as is with a nice green salad and rice. One way we enjoy our lemon yogurt chicken is as a gyro. Here is what you will need:
Sliced Lemon Yogurt Chicken
Slice tomatoes (we halved some grape tomatoes)
Lettuce (we chopped up some romaine)
Tzatziki Sauce
Feta Cheese
Pita bread (we used a Flat Out wrap or you could use a flour tortilla)
On an open pita or tortilla, layer all the chicken gyro ingredients. Roll up and enjoy!
Trust me, you’ll LOVE this and it is so super easy. Also, you can cut the recipe in half if you’d like fewer/no leftovers.
