Party Thyme, Get Your Grill On – Grilled Pineapple

Happy Sunday!  It’s going to be another hot one here today….highs in the 90s, humid, with pop up heat storms in the evening.  It’s a good thing I’m grilling outside so I can keep the heat outside and the coolness inside my house.

Are you ready for some more grilling inspiration?  Yesterday I shared Grilled Black Pepper Scallops, Grilled Salmon, and Grilled Baby Bok Choy.  Well, today I’m not going to share any meat recipes.  Instead I’m going to kick off the day with some grilled fruit.  Check this out!

Grilled Pineapple

Now, before I continue, I just want to say that my husband is not a big fan of cooked pineapple…of course he has usually been exposed to it on either Hawaiian pizza, or in a sweet and sour dish.  So, he was rather skeptical but when he ate this…he was totally blown away.  In fact, he couldn’t stop eating it.

Ingredients:

  • 1 large ripe pineapple, peeled and cut into 1/2 inch slices (you will notice that some of my slices look like hour glasses…that’s because my pineapple had a few bad spots).
  • Juice of 1 lime
  • 1 Tbsp olive oil
  • 2 Tbsp sugar (I used turbinado)
  • 1 tsp cinnamon
  • Grill, of course! :)
Directions:
Prepare your pineapple and place in a bowl.  In another bowl, mix the remaining ingredients to make a marinade.

Place your pineapple slices on a hot grill and baste the tops with your marinade.

Once your slices begin to show nice grill marks, turn over and cook on the other side…brush the tops with your marinade.   Continue cooking until grill marks appear on this side.  Turn your pineapple again and brush with marinade.  You will turn your pineapple about 4 or 5 times, brushing on marinade each time.  This helps to get the flavors from the marinade to infuse your pineapple.

Doesn’t this look delish?  The flavors blend so nicely that you are not left thinking, “Oh, taste that lime”.  It’s just plain good.  And if you want a truly decadent dessert, slice up your grilled pineapple, removing the cores, and serve on top of some vanilla ice cream!
