What is your favorite vegetable? Is it broccoli, like my older son and me? How about peas like my daughter? What about fresh carrots like my youngest? My husband loves artichoke hearts, do you?
Okay, now for all the veggies you don’t care for, what is it that turns you off? Is it a textural thing (like 2 of my kids and mushrooms)? Is it the actual flavor (like my husband and beets)? Or is it because it is intensely boring (like me and lima beans)?
To me, cauliflower falls into the ‘boring’ category. However, the upside to a boring veggie is if you grill it, OMG, it can become AH-MAZING! This is because the natural sugars have a chance to brown and actually sweeten a vegetable. Crazy, I know, but it it’s true. Check this out!
Grilled Cauliflower
Take a head of cauliflower and pull off all the green leaves. Then cut it into 2 or 3 slices. (Note, the end flowerettes will fall off and will need to be used for another purpose). Brush both sides with olive oil and sprinkle with your favorite seasoning. (I used the blackening seasoning mix that I used when I made Blackened Swordfish).
Place on a hot grill and cook for about 5 minutes or until you have nice grill marks on one side and you can smell a nice browning aroma. Flip and cook on the other side an additional 5 minutes or so.
See how nice and browned your cauliflower is? Even if you don’t like cauliflower, you’ll love it grilled. It is super yummo (reminder, don’t eat the stem).
