Now, at first blush, you may be thinking that this is a crazy combination…chili peppers with dark chocolate! Just take a bite and you will be pleasantly surprised. The chili/chocolate combination is very yummy. I think the trick is not to go overboard with the chili. Well this chocolate bar was the inspiration for today’s favorite spice recipe: Chocolate Chipotle Brownies.
These really are good. Just a little bit of ground chipotle pepper makes the chocolate have a bit more depth than traditional brownies. Trust me, I think you’ll really enjoy these.
Chocolate Chipotle Brownies
Ingredients:
1 4 oz semi sweet or dark baking chocolate bar
1 stick (1/2 cup) unsalted butter, cut into pieces
1 cup sugar
1 tsp vanilla
2 large eggs
1 cup all purpose flour
1/4 tsp baking powder
1/4-1/2 tsp ground chipotle pepper
1/2 tsp salt

Directions:
Preheat oven to 350 Degrees F. Grease and flour an 8″ x 8″ pan and set aside.
Break up the chocolate bar and place in a pot along with the butter. Melt over low heat. Stir to make sure the chocolate does not scorch.
When the chocolate/butter mixture is completely melted, turn off the heat and let it cool until it is room temperature. Once cooled down, add the sugar, vanilla and eggs and mix thoroughly.
In another bowl, combine the flour, baking powder, chipotle pepper, and salt. Add the chocolate mixture to your dry mixture and blend. Pour into your prepared pan and bake for 25-30 minutes, or until toothpick comes out clean. Do not over bake.
Notes:
- If you do not have any baking chocolate bars, you can use 12 Tbsp cocoa powder and 4 Tbps oil.
- These brownies can also be made without chipotle pepper if you prefer.
