Don’t you just love the yummy spices that come together to make that great cup of chai tea? They not only taste good but they smell divine! Well, that got me to thinking. What if you took a simple quick bread recipe and added a chai spice blend. Sound good? Well, here’s how it turned out!

Chai Quick Bread
Ingredients:
2 sticks (1/2 pound) unsalted butter, room temperature
2 cups sugar
5 large eggs, room temperature
3 cups whole wheat pastry flour or all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp kosher salt
1 tsp cinnamon
1 tsp ginger
1 tsp ground cardamom
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp ground cloves
1/2 tsp black pepper
3/4 cup buttermilk, room temperature
1 tsp vanilla extract
Directions:
Preheat oven to 350 Degrees F. Grease 2 loaf pans and line the bottoms with either parchment paper or waxed paper.
Cream the butter and sugar in a bowl until light and fluffy (could take 4 or 5 minutes). Then, add eggs one at a time, mixing well between each egg.
In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, nutmeg, allspice, cloves, and black pepper. In another bowl, add the buttermilk and vanilla and stir.
Alternating, add the flour mixture and the buttermilk/vanilla mixture to your butter/sugar/egg mixture, begining and ending with flour.
Divide your batter evenly between the two pans and bake for 50-60 minutes or until a toothpick comes out clean. Let your bread cool 10 minutes in the pan, then remove the break and have it finish cooling on a cooling rack.

Notes:
- If your eggs are not at room temperature, just put them (while still in the shell) in a bowl of warm water.
- Whole wheat pastry flour is not the same thing as regular whole wheat flour. It is ground from a different type of wheat and is ground much finer than regular whole wheat flour.
