When you think of Christmas, what flavors come to mind? For me, the main flavor is mint. Yup! Things like peppermint ice cream, peppermint pinwheel cookies, and mint brownies. However, the one (special) mint treat that I only have over the winter holidays is peppermint bark. How about you?
Well, surfing around on Pinterest, I ran across a recipe for “Strawberry 2 Ingredient Fudge”. The recipe is incredibly easy and it got me to thinking. What if I made some Peppermint Bark Fudge? Time to experiment!
Easy Peasy Peppermint Bark Fudge
Ingredients:
1 tub of white frosting
1 package of white chocolate chips
1 package of peppermint mints
1 package of mini semi-sweet chocolate chips (optional)
Directions:
This recipe comes together quickly so before you begin to actually make the fudge, you will need to crush your mints. Now, I have made peppermint bark in the past and tried to crush my mints in a food processor. However, this method is VERY loud and really doesn’t work all that well. I suggest you crush your mints the old fashioned way. “How is that?” you ask?
Unwrap your mints and place them in a bag (I used a zip lock bag — not very old fashioned, I know).
Then, place your mints on the floor or another hard and stable surface. Using a hammer, crush your mints. This doesn’t take long, honest. By using a hammer, you can be sure that every mint is crushed and you can see that the mints are crushed to your liking.
Now onto actually making the fudge. I didn’t take pictures because it all went so fast. So here are the steps I took.
1. Line a 8 x 8 or 9 x 9 baking pan with foil and spray with oil.
2. Melt the white chocolate chips in either the microwave (in a micro-wave safe bowl) or in double boiler.
3. When the chocolate is melted, working quickly, stir in the crushed mints. Then, add the frosting and mix thoroughly.
4. Pour your fudge into your foil lined pan, spreading it out evenly. If desired, sprinkle some mini-chocolate chips on top of your fudge.
5. Let the fudge sit until set. Cut into small pieces using a sharp knife. Enjoy!
Notes: I use a double boiler to melt my chocolate because chocolate scorches so easily. If you use the microwave, watch your chocolate closely. Start out heating your chocolate on high for just 1 minute. Then heat again in 15 minute increments, stirring between each, until the chocolate is completely melted.
I was totally surprised at how amazing this fudge is considering how easy and quick it is! Hmmmm, I think I have another combination to try out!

You’re a dangerous woman! Oh Marilyn. Funny you say peppermint reminds you of Christmas. I always think of mangoes, stone fruit, but still Christmas flavours of fruit cake and plum pudding. I love all flavours. You know that. Any day, any time of year! LOL
