Wow, the temperature has definitely dropped here today and fall is in the air. However, I put my garden in late and I am still enjoying the tastes of summer. When I think summer I think tomatoes and basil right out of the garden. How about you? Well, here’s a quick meal that will have you enjoying the last of your summer harvest(s).
Margherita Quesadillas
Ingredients:
chopped/sliced fresh basil leaves
sliced fresh mozzarella (learn how to make your own here)
garlic olive oil/butter blend (lightly cooked to take the bite out of your garlic)
sliced fresh tomatoes
Flat Out bread or another flat bread or tortilla, your choice
salt and pepper, optional
Directions:
Using a pastry brush, coat one side of your flat bread
On buttered/oiled side of your bread, place one layer of cheese and top with tomato slice(s), basil and salt and pepper (to taste).
Fold your flat bread/tortilla in half and cook on a 350 degree F skillet until lightly browned. Turn over and cook on the other side until it is also lightly browned.
Cut in half and serve. Enjoy!
