I’m Anne and I blog at Domesblissity in Queensland, Australia. I was absolutely thrilled to be able to join in the first blogiversary celebrations of my good blogging buddy, Marilyn. I can’t remember who met who but I’m so glad we did. We’re about the same vintage and have heaps in common except maybe the age of our children. Hers are all grown up and going to college and mine are just starting school.
I love to cook and bake and make everything from scratch. My daughter is a fussy eater and I’m forever looking for healthy ways to sneak some goodness into my baking. For some reason I bought too many carrots this week and wanted to make some carrot cakes. I have a baking pan that bakes the cakes into semi circles so I thought this would be cute, sandwiching the cakes together with cream cheese frosting. (These can be made in a regular cupcake pan and frosted the regular way with the frosting.) With the addition of some nutritious quinoa flakes, I thought I’ll be on a winner with these.
Carrot Quinoa Cakes with Cream Cheese Frosting

1 1/2 cups plain flour

1/2 tsp cinnamon

1/2 cup quinoa flakes

1 cup sugar

1 cup water

1 teaspoon vanilla

1/4 cup walnuts, finely chopped

1 cup carrot, grated

1 tablespoon white vinegar

6 tablespoons oil (I use canola)

1 tsp bicarb soda

1/2 tsp salt
- 125g light cream cheese, softened
- 2 tbs icing sugar mixture
- 150ml whipped cream
- Turn oven to 180 C (375 F).
- Put the flour, quinoa flakes, sugar, cinnamon and water in a bowl. Add vanilla, carrot, walnuts, vinegar, oil, baking soda and salt.
- Mix until smooth. (Mixture is runny.) Pour batter into the cake pan or cupcake liners and fill about 3/4 full.
- Bake 20 minutes or until cooked. Cool and remove from pans.
- Frost with cream cheese frosting.
