Whenever I think Applebee’s I always think “Spinach Artichoke Dip!” It is definitely one of my favorites. Why should something so yummy be limited to a restaurant? I decided it was time to create something like this at home.
I had some of my best girl friends over to sample some Beer Flats (AMAZING dipping cracker)…a perfect time to have my friends try out some of this goodness!
Doesn’t it look delicious? Well, it’s easy and you can make some yourself. And it does go so well with Beer Flats (you can win some here). Here’s how…
Spinach Artichoke Dip
Ingredients:
1 Tbsp coconut oil/butter/olive oil
1 small sweet onion diced
2 cloves garlic minced
1 10-oz package frozen chopped spinach (thawed and squeezed)
1 14-oz can of artichoke hearts (or 7 artichoke hearts) chopped
2 tsp oregano
2 tsp fennel seeds
1 tsp cayenne pepper
1 8-oz package of cream cheese (softened – room temperature)
1 cup grated parmesan, romano or a blend of both
1 cup heavy cream
Directions:
Preheat you oven to 350 Degrees F. In a pan, heat your oil (I used coconut oil but butter or olive oil would work well also). Add your diced onions and garlic. Cook on medium high heat for about 5 minutes
To your onion/garlic mixture, add your thawed/squeezed spinach (you want as much of the liquid squeezed out of your spinach as possible, chopped artichoke hearts, oregano, fennel, and cayenne. Saute about 3-5 minutes until the spinach is incorporated into the onion/garlic mixture.
Now add the cream cheese and stir until it is blended into your vegetable/spice mixture.
Once blended add the parmesan/romano and stir well. Add the cream and mix once more.
Now pour your dip into an oven safe bowl (I used a ceramic pie plate). Bake in a 350 Degree F oven for 10-15 minutes until it bubbles and begins to brown
Take out of the oven and enjoy. Serve with tortilla chips or Beer Flats!
