I love almonds and I love almond butter but it can be quite astringent…unless you get Justin’s.
This brand is super yummy. Not at all astringent. I can eat this by the spoonful! It has four ingredients: almonds, maple sugar, palm oil, and salt. I assume that the palm oil is added to help keep the oil from separating from the ground nuts (as natural nut butters often do) and the maple sugar reduces the astringent quality.
This brand is expensive so I decided to make my own version at home. Well, it got rave reviews from my guys! If you like coconut and almond, you will love it as well.
Almond Coconut Butter
Ingredients:
8 oz. roasted almonds (I used dry roasted)
2 Tbsp maple syrup
2 Tbsp virgin coconut oil
1 Tbsp grapeseed, canola, or sunflower oil
1 tsp salt
Directions:
Place all ingredients in a food processor (a blender did not work for me) and blend until nuts are well blended. Enjoy and use as you would peanut butter!
Notes: My nut butter was dry and not spreadable so I added the grapeseed to help this. You may need to alter the amounts of your fats to accommodate the type of roasted almonds you use (dry roasted will require more oil)
