I don’t know what the weather has been like near you but it has been blistering hot here. As a result, I did not make two of my recipes for you using coconut oil Monday or Tuesday. It was just way too hot to heat up the kitchen! So, instead I have compiled some links to interesting facts, uses, and recipes for coconut oil. (Also, don’t forget to enter for a chance to win a quart of Tropical Traditions Gold Label Virgin Coconut oil. You can do so here before midnight Friday, June 1, 2012).

If you haven’t tried virgin coconut oil, you really should. I find it has a high smoke point so it is great for sauteing. It also brings a natural sweetness which actually acts as a flavor enhancer in savory dishes and allows you to cut down on the amount of sugar needed in sweet items.
Go coconuts!

Hi Marilyn.. I am from South India (where coconut is used extensively in dishes, I actually have a coconut tree in my backyard) and when I saw your link on ‘Share the Wealth Wednesday’, I could not help but check it out! Apart from the recipes, it does wonders for skin and hair too.
