Almond Joy Inspired Muffins

Coconut, almonds and chocolate…I see why these candy bars are called, “Almond Joys”.  This combination always brings a smile to my face! I thought I’d try to bring all this goodness into a muffin.  Here’s my concoction. I hope you enjoy it!

“Almond Joy” Muffins

Ingredients:
1 cup coconut
2 cups all-purpose flour
1 tsp baking soda
2 tsp baking powder
1 tsp salt
2 eggs
1 cup yogurt*
6 Tbsp virgin/unrefined coconut oil (or butter), melted*
1 tsp coconut extract
1 tsp vanilla extract
1 tsp almond extract
1 cup mini semi sweet chocolate chips
Instructions:
Preheat oven to 400 Degrees F.  In one bowl, combine coconut, flour, baking soda, baking powder, and salt.  Add to this same bowl, eggs, yogurt, oil/butter, coconut extract, vanilla extract, and almond extract. Mix thoroughly.  Fold in the mini chocolate chips.    
Using spray oil, grease a muffin pan.  Spoon batter into the 12 muffin cups.  Bake for 18-20 minutes or until a toothpick inserted in the middle comes out clean. Makes 12 muffins
* I use my homemade whole milk vanilla yogurt (recipe is found here)
* Unrefined/virgin coconut oil has a lovely coconut taste and aroma which enhances this recipe

    They sound so good Marilyn. I can remember Almond Joys when I was in the States. I had quite a few of them! We have something similar. It’s called a Bounty and it’s just the coconut and it’s chocolate coated, no almond. I’m going to try these.
