I never really knew much about Mardi Gras growing up. My family had always lived in the northern midwest area with no ties to the Gulf Coast region. This changed when I married. Although my husband was born and raised in the midwest, his mom was born and raised in Biloxi, MS with cousins living in New Orleans. His mom and brother’s family currently live in Mobile, AL. New Orleans & Mobile are both big Mardi Gras cities.
Do you know what Mardi Gras means? It’s “Fat Tuesday”. It’s always the Tuesday before Ash Wednesday…the last day of living large before the season of Lent begins. Throwing/wearing strands of beads and wearing masks & costumes are a part of the celebration in New Orleans and Mobile. However, Mobile has something that is a big part of their celebration that you may or may not know….the moon pie! Crazy!
To celebrate “Fat Tuesday”, I thought I’d share some links to some good old fashioned cajun/creole food with you!
From the foodnetwork.com, here is a Beignets Recipe from Paula Deen along with a how-to video. These are a yummy square donut topped with powdered sugar.
From the foodnetwork.com, here is Emeril Lagasse’s Jambalaya Recipe.

Whip up some Dirty Rice from Paula Deen’s recipe on foodnetwork.com
One of my favorites is Red Beans and Rice and this is Alton Brown’s Recipe from foodnetwork.com
I don’t know about you but I’m getting hungry!

Oh Marilyn! You’re the best. I watched “The Princess and the Frog” with the kids on Saturday and I’ve been craving a beignet ever since. I was fortunate enough to go to New Orleans (and Biloxi) back in 2000. Beignets were one of my favourite things. I wasn’t too keen on a moon pie though. I’m so glad you posted these recipes because I’ve always wanted to make them. I had jambalaya and gumbo too. You’re a real doll. I’ll let you know how I go.
