My family loves garlic…really loves garlic. And whenever we have an Italian dinner, garlic bread is always requested. Well, the other evening, we had ravioli but I didn’t have any Italian style loaves of bread to turn into garlic bread. Time for the thinking cap. Here’s what I came up with and the guys loved it!
Cheesy Garlic Rolls
Ingredients:
2 tubes of refrigerated biscuit dough (not Grands but the smaller tubes w/10 biscuits each)
6 sticks of string cheese
2 Tbsp butter
2 Tbsp olive oil
2-4 cloves garlic
Spray oil, optional
Equipment:
Oven
Muffin pan (12 muffin size)
Bowl
Pan
Garlic Press or cutting board and sharp knife
Instructions:
Preheat oven to 350 Degrees F. In a pan, place your butter and olive oil and cook over medium heat. Once the butter is melted, using your garlic press, add “smooshed” garlic (or if you don’t own a garlic press, peel your garlic and mince. Add this minced garlic to the butter/olive oil). Turn off the heat; you don’t want to cook the garlic too long because it will cook longer in the oven.
Cut each piece of string cheese into 6 equal sized pieces (you will have 36 pieces of cheese). Cut your biscuits into 2 equal halves. In one of your biscuit halves, place a piece of cheese.
Then wrap the dough around the piece of cheese and seal shut. Place in your bowl.
Repeat this until you have used all 36 pieces of cheese. Now, pour the olive oil/butter/garlic mix into the bowl and toss to cover.
If you need, spray your muffin pan with spray oil. Then place 3 of your cheese/dough balls into each of the muffin “forms”.
Bake in heated oven 15 – 20 minutes. (I baked mine 17 minutes).
Hot out of the oven. The guys loved them. I hope you do too!
