Even though 2 of my kids are away at college and I only have one left at home (along with my hubby and dog) mornings are still hectic! A lot of this is due to the fact that the high school starts at 7:30 am! So, getting everyone up and ready and out the door leaves very little time for a hearty, homemade breakfast….until now that is! Mr. Crockpot to the rescue! Right after you get done cleaning up from dinner, pull out your trusty crockpot, add a few ingredients, set your crockpot on low and 8-10 hours later, BREAKFAST! See what you think!
Crock Pot Brown Sweet Rice Breakfast
(serves 4-6 people)
Ingredients:
2 cups brown sweet rice (or brown short grain rice)
1 cup dried fruit (I used 1/2 cup each of raisins and chopped dates)
1-2 tsp cinnamon
4 cups vanilla almond milk
Optional serving add-ons: butter, maple syrup, nuts, milk
Equipment:
Crockpot w/lid
Spoon
Instructions:
Place all ingredients in a crockpot and stir to ensure the cinnamon gets mixed completely.
Place the lid on your crockpot, set it on low, and relax for the evening…and go to sleep. In the morning you will have a wonderful rice pudding type breakfast! You can add maple syrup, nuts, milk, or butter as desired. (My hubby just likes to add a pad of butter!)
Notes:
- If you will be cooking this more than 8-10 hours, add additional almond milk or water so it does not scorch.
- If you do not like dried fruit, you may omit it. I find that this adds a nice natural sweetness so

I keep meaning to have a go at rice pudding in a slow cooker. I’ve never thought of using brown rice though. Cool idea!
